Fiesta night calls for mojitos and some spicy curry tacos. Use Mint Sugar to create a minty simple sugar (one part sugar and one part water boiled on the stove), then combine a few pinches of Peppermint Tea and a splash of simple sugar in the bottom of a Collins glass and crush with a muddle, add two ounces of white rum and stir, cover with ice and fill with sparkling water, garnish with a fresh mint leaf or citrus twist.
